Tuscan Herb Vinegar

Makes 2 cups

Ingredients:

3 to 4 sprigs rosemary
3 to 4 springs thyme
5 to 6 leaves oregano
2 cloves garlic, peeled and coarsely chopped
2 cups white wine vinegar

Place the ingredients in a sterile, air tight container. Place in the refrigerator for 1 month. Strain through a fine mesh sieve, and place in a clean, sterilized jar.
