Primavera Salad
Serves 4
Ingredients:
2 pounds frozen fava beans, thawed
1 large bunch watercress, washed and dried
1/4 cup olive oil
2 tablespoons sherry vinegar
Salt and freshly ground pepper
1/4 pound whole Parmesan cheese
1/4 cup thinly sliced leeks
Blanch the fava beans in a pot of boiling, salted water for 2 to 3 minutes. Drain and rinse with cold water.
Place a handful of watercress on each plate and add about 1/2 cup of fava beans on top. Drizzle with the olive oil and the sherry vinegar. Season with salt and pepper. Thinly shave the Parmesan and top each salad with 2 to 3 slices. Garnish with the leeks. Serve with warm bread slices.
