Makes 20 to 25
Ingredients:
1 pound grated Parmesan cheese
1 tablespoon coarse black pepper
1/2 cup all purpose flour
Preheat oven to 425 degrees F.
In a large bowl, mix the Parmesan, pepper and flour. On a baking sheet that has been fitted with a Silpat mat (a non stick silicon baking mat), spread about 3 tablespoons of the cheese mixture into a 4-inch circle. Repeat to fill the entire tray. Bake 8 to 10 minutes until the cheese is melted and resembles lace. Remove from the oven and let rest 2 to 3 minutes. With a flat spatula, carefully move the crisps to a cooling rack and let rest until entirely cooled.
