Serves 4 to 6
Ingredients:
1 cups of Mozzarella Bocconcini
1 cup olive oil
1/4 cup lemon juice
1/4 cup chopped fresh basil
1 teaspoon thyme leaves
1 tablespoon black peppercorns
1/2 tablespoon kosher salt
2 bay leaves
In a small bowl, whisk together the olive oil, lemon juice, basil, thyme, peppercorns and salt. Place the bocconcini in an airtight container and pour the mixture over the top. Place the bay leaves on top, seal the container and shake for a few seconds. Marinate in the refrigerator 1 to 2 days. Let come to room temperature before serving.
