Lemon Champagne Vinegar

Makes 3 cups

Ingredients:

2 lemons
2 cups white wine vinegar
1 cup champagne

Heat the vinegar until almost boiling. Pour into a sterile, air tight container with the lemon peel and add the champagne. Place in the refrigerator for 1 month. Strain through a fine mesh sieve, and pour in a clean, sterilized jar.
