Serves 12
Ingredients:
1 1/2 tablespoons fennel seed
6 garlic cloves, peeled
3 tablespoons chopped sage
Salt and pepper
1 cup Italian beer (such as Peroni)
1 (4 pound) pork butt
12 Italian rolls
Sliced red onions
Preheat oven to 250 degrees F.
Place the fennel, garlic, sage, salt, pepper and beer in a food processor and pulse until well mixed. Place the pork in a baking dish and pour the mixture evenly over it. Cover with foil and bake 5 hours. Uncover and place under the broiler until browned. Let rest 20 minutes.
Cut the pork into slices 1/2 inch thick. Place a slice of meat on a warm roll and spoon over a little of the pan juices onto the sandwich. Serve with sliced red onions.
