Serves 4
1 1/2 to 2 pounds butternut squash, peeled and diced
Olive oil
Salt and pepper
3 tablespoons minced garlic
Preheat oven to 400 degrees F.
Line a cookie sheet with foil. Place the squash on the foil and drizzle with olive oil. Toss to coat. Sprinkle with salt, pepper, and garlic. Roast for 15 to 20 minutes, until slightly caramelized and soft. Serve warm.
