Serves 4 to 6
Ingredients:
9 cups water
2 tablespoons coarse salt
2 cups cornmeal
Peanut oil
Bring the water to a boil in a medium stock pot. Add the salt and reduce the heat to medium low. As soon as the water begins to simmer, slowly pour in the cornmeal in a thin stream, stirring constantly with a whisk to prevent lumps. Once all the cornmeal has been added, simmer and stir frequently for 25 to 30 minutes.
Once completely cooked, pour onto a greased baking sheet about 2 inches thick and allow to set. Cut into squares and fry in a few inches of hot oil until golden brown and crispy. Top with your favorite toppings such as goat cheese, sautéed spinach, grilled sausage and peppers, etc. Serve warm.
