New York Style Cheesecake

Makes one - 9 inch cheesecake.

Crust Ingredients:

2 cups of graham cracker crumbs or finely crushed biscuits
1/4 cup granulated white sugar
1/2 cup unsalted butter, melted

Ingredients

* 8 ounces biscotti (lady fingers)
* 6 tablespoons melted butter
* 12 ounces whole milk fresh ricotta drain
* 2 packages of 8 ounces cream cheese at room temperature

Zuppa Inglese

Serves 6

Ingredients:

* 8 ounces Savoiardi or ladyfingers
* 3 cups milk
* 1/2 cup flour
* 1/2 cup sugar
* An ounce bitter cocoa powder
* 4 yolks

Classic Tiramisu

Ingredients

* 6 egg yolks
* 1 1/4 cups white sugar
* 1 1/4 cups mascarpone cheese
* 1 3/4 cups heavy whipping cream
* 2 (12 ounce) packages ladyfingers

Chocolate Covered Strawberries

Ingredients

* 6 ounces semisweet chocolate, chopped
* 3 ounces white chocolate, chopped
* 1 pound strawberries with stems (about 20), washed and dried very well

Directions

Put the semisweet and white chocolates into 2 separate heatproof medium bowls. Fill 2 medium saucepans with a couple inches of water and bring to a simmer over medium heat. Turn off the heat; set the bowls of chocolate over the water to melt. Stir until smooth. (Alternatively, melt the chocolates in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted.)

Basic Gelato

Ingredients

* 2 cups milk
* 1 cup heavy cream
* 4 egg yolks
* 1/2 cup sugar

Hazelnut Gelato

Makes 1 quart

Ingredients:

1 cup hazelnuts
2 1/2 cups whole milk
1/3 cup heavy cream
4 large egg yolks
1/4 cup, plus 2 tablespoons sugar

Italian Cream Cake

Serves 8 to 10

For the cake:
2 cups granulated sugar
1 1/2 cups vegetable shortening, softened
1 stick unsalted butter, softened
5 large eggs, separated
2 cups all purpose flour

Italian Strawberry Ice

Serves 2

1 pint fresh strawberries, trimmed
1/4 cup sugar
2 teaspoons fresh lemon juice
2 cups ice cubes (about 11)
Mint leaves

Chocolate Gelato

3 cups whole milk
4 ounces semisweet chocolate, chopped coarsely
3/4 cup sugar
2 tablespoons cornstarch
