Crostini Toscani / Tuscan Pate

Ingredients

* 7 oz chicken livers and hearts (the hearts are optional)
* 2 small onions
* 1 oz. butter
* 2 tsp capers, soaked, drained and chopped

* 7 tablespoons extra-virgin olive oil
* 1 small onion, finely chopped
* 4 anchovy fillets
* 1 garlic clove, minced
* 12 ounces chicken livers

Kalamata Olive Crostini

Makes approximately 3 cups

Ingredients:

6 cups Kalamata olives
1/2 cup olive oil
2 cloves garlic
1/2 cup toasted pine nuts
2 tablespoons minced parsley
Italian bread, sliced and toasted
